Peanut Butter Crunch Protein Bar is an all natural gluten free, high calorie protein bar. At $1.75 per bar this recipe makes approximately fourteen, 1.5in x 3in, protein bars.
1 cup of peanut butter
1/2 cup of Extra Virgin Coconut Oil
2/3 cup of honey
2 cups oats (not instant)
1 1/4 cups mini chocolate chips
3/4 cup chopped walnuts
1. In a medium saucepan, melt the peanut butter, coconut oil, and honey together on low heat.
2. In a large bowl mix together the chocolate chips, oats, and walnuts.
3. Remove from melted mixture from heat and pour into the bowl with the dry mixture.
4. Stir until the chocolate chips are melted. Pour into a cake pan and refrigerate for an hour or until hard.
